San Simeon Viognier undergoes fermentation for several weeks at precisely 55°F, which preserves the delicate flavors and aromas of this variety. After fermenting, 10% of San Simeon Viognier wine is transferred to neutral French oak barrels, where the lees are stirred several months to add depth and texture.

San Simeon Viognier is a luscious, bright wine with ripe peach flavors and tropical notes. The nose is greeted with bright floral aromas.
